Thursday recipe: tortellini with roasted red pepper sauce



Let’s make tortellini with a roasted red pepper sauce!


What you’ll need:

  • 1 package of your favorite tortellini

  • 1 yellow onion

  • 6-8 Campari tomatoes

  • 1 red pepper

  • 2-3 cloves of garlic

  • 1 cup of Parmesan cheese

  • Cooked protein of your choice

To make it:

  1. Preheat the oven to 400 degrees

  2. Boil water on high with a drizzle of olive oil and a heavy pinch of salt

  3. Chop your garlic, onion, red pepper and tomatoes

  4. Toss the veggies in olive oil, salt and pepper and roast for 35 minutes or until tender and done

  5. Remove the pasta, reserving about a cup of pasta water, and cook your protein if desired

  6. Blend the veggies in an immersion blender until a sauce consistency forms

  7. Add the sauce, pasta, water and protein back into the pot and mix with the Parmesan cheese

  8. Place your portions in bowls and top with freshly grated cheese

  9. That’s dinner! Enjoy!
