Fall recipe: pumpkin spice overnight oats



Let's make pumpkin spice overnight oats! I have been eating these oats nonstop this season. They're perfectly cool for the still-hot Florida weather this time of year while giving that cozy fall flavor I crave during the 'ber months.



Incregients:

  • 2 cups of old fashioned oats

  • 1 cup of ground flax and chia seed

  • 1 cup of pumpkin purée

  • 2 cups of plain Greek yogurt

  • 1 cup of milk of your choice - you may need to add more depending on how thick your oats become

  • 2 tablespoons sweetener of your choice - I chose maple syrup but brown sugar or honey would be great too!

  • Pumpkin spice seasoning to taste


To make it:


  1. Add the above ingredients in order to a large storage container with a lid , mixing thoroughly after each new ingredient is added

  2. Store overnight and serve desired amount for breakfast (or lunch or desert!) each day for up to 5 days.

  3. You can top each bowl with blueberries, stone fruit or even more milk and sweetener. Enjoy!
