Fall recipe: Pumpkin gnocchi with a fall pasta sauce


Let's make pumpkin gnocchi in a simple fall pasta sauce!


I could eat a sausage gnocchi every week, and this one can be super versatile depending on what you have in your fridge.


Ingredients you'll need:

  • 1 package of gnocchi, I found pumpkin gnocchi at Trader Joe's

  • Sliced sausage

  • 6-8 sage leaves

  • 1/2 cup of butter

  • 1 finely chopped shallot

  • 1/4 cup of apple cider vinegar

  • 1 cup of tomato sauce (or, skip this and double your cream and cheese for a rich pumpkin Alfredo sauce!)

  • 1 cup of pumpkin

  • 1/2 cup of water

  • 1/4 cup of maple syrup

  • 1/2 cup of heavy cream or half and half

  • 1 cup of Parmesan

  • Salt to taste


To make it:

  1. Cook your sausage or protein of choice and remove from the pan

  2. Melt butter until golden brown and cook sage leaves in the butter, until crispy. Remove.

  3. To the same pan, cook the diced shallot and deglaze with apple cider vinegar when translucent

  4. Add tomato sauce, pumpkin purée, water and gnocchi and cook covered until done

  5. Add maple syrup, heavy cream and salt, and add the cooked sausage back to the pan

  6. Stir in Parmesan cheese until melted together

  7. Serve in pasta bowls with baby mozzarella and baby sage leaves

  8. Enjoy!
